Jason’s approach.
Initial Thoughts / Set Up
When Jason approaches the v60, he shoots for rapid brew times. That being said: grind coarse and pour quick.
Start by placing the filter in the v60 and rinsing it. This removes any potential paper residue and pre-heats everything. Be sure to toss that rinse water, maybe in a nearby plant!
Honing In
Here are the intervals:
(1:16.5 coffee:water ratio)
25g of coffee: 413g of water
00:00 pour to 60g
00:25 pour to 240
01:25 pour to 413g
Let the last 73g be only a center pour.
Pull filter as soon as grounds are dry, as this reduces any unintentional over-extraction.
Brew bed should be dry at 02:30
Jason used water of 195 Fahrenheit for this brew.
Finishing / Post Brew
If the goal is to recreate Jason’s recipe, here are a couple of notes of where errors could have been made.
Issue: the brew ran long, as in > 3 minutes. Solution: it could be that the grind was too fine, or your pours were not fast enough. Try coarser grind along with tighter pours.
Issue: the brew bed is not flat. Solution: try pouring slower, and possibly make grind finer.
